Postharvest Technology: Why apples and bananas are available year-round
About
This talk provides a farm to fork view of the science and technology used to preserve fresh produce in a safe, nutritious and saleable condition for as long as possible. The talk gives an overview of research-led state of the art techniques and explores the postharvest technologies that make it possible for consumers in the UK to buy apples in February and bananas that are imported throughout the year.
Drawing on Dr Ros Fisher's expertise in crop production, plant physiology and postharvest storage, it examines the factors affecting storage of fresh produce and the technologies used to maintain quality after harvest. The presentation will also highlight how storage methods have evolved, the research-driven techniques used to preserve flavour and extend shelf life, and the challenges and lessons learned along the way. It will conclude by exploring how metabolomics research is helping to shape the future of postharvest storage.
